The OSETRUS caviar company was a pioneer at the beginning of their operation regarding sturgeon farming and caviar production in Greece in 2011. Kostas Koukaras contribution was crucial in order public authorities to be convinced for the environmental sustainability of the farm during environmental permits procedure.

During the Hellenic Inland Shrimp Farms project the responsibilities of Kostas Koukaras were the biofloc system design and testing, the production process design and the coordination of the environmental permits procedure.

The company collaborated with Kostas Koukaras in the framework of the Blue Boost program for the application of innovative monitoring technologies in its production process.
